Oof. Yesterday was a sad day! No in any life-shattering way, but a really nostalgic way: we're probably going to have to move. BOO. We LOVE the house we're in now. It's an adorable little 2-bedroom red/white bungalow, two blocks from Main Street, two blocks from the farmer's market, two blocks from the trails, built in the late 1800s... I really love living here! Sure, it has "charm" — the lack of foundation means it feels like a fun house with warped floors, crooked doors, and too little insulation makes winters a bit chilly; however, I wouldn't trade it for anything!

Our landlord, who is really fantastic and laid back (and our neighbor!), wants to sell the place. Totally understandable. She used to live here, then the family grew and they needed more space. Now it doesn't make sense to hold onto it. This house has a serious lack of storage, and with two kids it would be REALLY cramped. But it's perfect for the two of us! Right now we have trees flowering in the front and back, and the weather is nice enough to leave the doors open all day. I love walking out back to the greenhouse and checking on my plants (my babies!). We have a red picnic table out front, perfect for summer dinners.

I often fantasize about how I would fix this house up, if I were to suddenly have an unlimited amount of money. It would need to be jacked up and have a foundation poured. I'd re-do the inside for better storage, and maybe turn the root cellar into a real basem*nt. The house looks like it has an second floor, but it doesn't. I'd change that — open up the wasted space and use it as a loft bedroom or office. There is so much potential! I really think about buying it, sometimes, but knowing there is quite a bit of work to be done makes it seem like a poor investment. But the location! Aaah the location is perfect.

If anyone out there wants to invest in this house for me, and let us keep living here, just let me know! I'll send you cookies every day for a year. Maybe just every week. It'd be really nice to not have to move before the wedding (especially since I'm growing flowers in the yard!!)!

In more exciting news, these raw kiwi-banana tarts were my way around sugarless dessert this week. Sure, they have a lot of best online casinos sweetness with dates and bananas; however, they follow the letter of the law: no processed sugar. Woohoo! Surprisingly easy to throw together, and surprisingly tasty, my sweet-tooth was placated this week by eating these en masse. I just happened to have a lot of kiwi on hand, but I'm sure these would also be really good with berries on top! I cannot WAIT for berry season to hit here!

Ingredients

UnitsScale

  • 1 cup pitted dates
  • 2 cups raw nuts (I used pecans, but almonds or walnuts would work)
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 3 bananas
  • ½ cup coconut milk (the canned kind, not the milk-on-cereal kind)
  • 4-6 kiwis, peeled and sliced into rounds

Instructions

  1. In a food processor, pulse the dates, nuts, cinnamon, and salt until fairly smooth. There should still be some flecks distinguishable, not a complete paste, but you should be able to press it into a tart pan.
  2. Press the paste into mini tart pans, and refrigerate as you continue.
  3. Combine the bananas and coconut milk in the now-empty food processor. Process until completely smooth.
  4. Pour into prepared crusts, top with kiwis, and serve immediately.

Good luck with the move! This looks great! I'll subsitute the crust for a graham cracker crust( I'm allergic to nuts), but I will definitely make this!

These look great! How long do you think they would last for?

I think these are best eaten ASAP... but I think they'd last two days in the fridge! With the banana filling, they may turn brown with time, but they'd still be fine to eat.

Have you made this the night before and added lemon juice to stop the browning? Or would lemon juice make it curdle?

I haven't tried it, but I don't think it would curdle! Let me know if you try!
